Meatloaf with Colcannon & Diane Sauce by Manu

Serves 6 | Prep Time: 60mins | Cook Time: 60mins

INGREDIENTS

1kg beef mince (15% fat)

1 cup finely chopped curly kale leaves

2 egg yolks

2/3 cup cooked brown rice

3 eschalots, finely chopped

2 cloves garlic, crushed

1 tablespoon Dijon mustard

1 tablespoon tomato paste

1 tablespoon finely chopped fresh oregano

Salt and pepper, to taste

12 slices prosciutto (200g)

2 x 150g pouches Diane Sauce by Manu

¼ cup coarsely chopped fresh parsley

COLCANNON

4 large Desiree potatoes (unpeeled)

500g rock salt

3 cups coarsely chopped curly kale leaves

3 green spring onions, thinly sliced

200ml pure cream, warmed

50g butter, softened

METHOD

  1. Preheat oven to 190C (fan-forced).

  2. For colcannon, place potatoes on a tray lined with rock salt. Bake on lower shelf for 45 minutes, or until tender.

  3. Meanwhile, to make meatloaf, combine beef, kale, egg yolks, rice, eschalots, garlic, mustard, tomato paste and oregano in a large bowl. Season with salt and pepper. Using clean hands, mix well until combined.

  4. Lightly grease and line a large loaf pan (14cm x 24cm) or terrine dish with baking paper, extending paper 6cm above edges. Line base and long sides with prosciutto, slightly overlapping, allowing a overhang on either side. Press beef mixture firmly into pan, folding the prosciutto over to cover.

  5. Cook in same oven, on upper shelf, for about 40 to 45 minutes, until prosciutto is crisp and meatloaf is cooked through (See Tip). Remove and stand 10 minutes.

  6. Working quickly while potatoes are hot, hold in a tea towel and scoop flesh from skin. Pass through a potato ricer or fine sieve into a saucepan.

  7. Just before serving, add kale, spring onion, cream and butter to potatoes and stir over a low heat to warm through. Stir in parsley and season with salt and pepper.

  8. Heat Diane Sauce by Manu in a small saucepan over medium-high heat until hot.

  9. Thickly slice meatloaf and serve with colcannon. Spoon over sauce.

Manu’s Tip:

To test if meatloaf is cooked, insert a small sharp knife in the centre. If juices run clear, meatloaf is cooked.
